Mishti Doi

Okay, so this one is my favourite. And, I am yet to meet a Bengali who would not call Mishti Doi awesome. It is a traditionally bengali dish, and the caramelized sugar is the secret to it.

Ingredients:

3 cups whole milk
3/4 cup sugar
1 tablespoon yoghurt, whisked
1 tablespoon water

Method:

Place a heavy bottom pan on the heat. Add milk and warm it on medium heat.
Keep aside 1/3rd of the sugar and add the rest of sugar into the milk.
Reduce the heat and continue to heat the milk till it reduces to half.
Then take it off stove and keep aside.
In another pan, put it up on the heat and add the kept aside sugar. While on a low medium heat, allow the sugar to get warm and then melt. You will gradually notice the colour changing to brown and start caramelizing.
When it gets to the point to golden bubbly mixture, add a tablespoon of water in the caramelized sugar and then pour this mixture into the heavy bottomed pan with milk. Stir well until it combines well.
Once milk cools off, add the whisked yoghurt, stir well and pour the mixture into earthen pots.
Let the doi set in a warm place for few hours. Once set, refrigerate it and serve chilled. Enjoy! 💕

Hot old gourmet cocoa

It is an old fashioned drink, but always comforting and soul-satisfying...

Ingredients:

1/3 cup unsweetened cocoa powder
3/4 cup white sugar
1 pinch salt
1/3 cup boiling water
3 1/2 cup milk
3/4 teaspoon vanilla extract
1/2 cup cream (optional)
A teaspoon of cocoa powder for decoration (optional)

Method:

Combine cocoa powder, sugar and a pinch of salt in a saucepan. Add the pre boiled water in it, stir it and bring the mixture to a boil now. Simmer and stir fr about 2 minutes.
Now add the milk, but do not bring it to a boil now, just make it very hot. Now remove it from the saucepan.
It would make about 4 cups. Decorate the top with whipped cream and cocoa powder.
Serve and sip...! 💋

Homemade Pizza Base Sauce

Though you can easily get it in supermarkets, still I did write it for people who would prefer it chemical and preservative free. Really easy and no stove involved, you would only need a mixer grinder or blender.

Ingredients:

1 kg whole or diced tomatoes
1 small white onion
6 cloves of garlic, roughly chopped
4 fresh basil leaves (Optional)
1 small teaspoon Apple Cider Vinegar
1 teaspoon Oregano
A pinch each of salt and black pepper
Just a little olive oil

Method:

Combine tomatoes, onion, garlic, basil leaves, vinegar, oregano, salt, pepper and olive oil and mix it in mixer grinder or blender.
Blend them till they are completely pureed.
Now taste your sauce and add salt, pepper, oregano or olive oil if you feel the need to do so. Blend for a few more seconds.
The sauce is ready to be used as it is, just smear it onto the pizza bases now.

Storage:

You can refrigerate the above pizza sauce for upto a week. However, if you want to prolong the storage, you can store it for upto 3 months by transferring the sauce into muffin tins and freezing until solid. Then, pop them out of the muffin tins and into the freezer container.
Microwave them for 30 seconds the next time you wish to defreeze the solid sauce and use it on pizza base.

Roti (Chapati) Pizza

So few days back,  I did post a picture of Roti Pizza on my Instagram and some people did ask me for the recipe. Best thing about it is that, you can even cook this on tava. So, here you go...

Ingredients:

Chapati (Preferably of last night, it would be crispier)
1 tomato, finely chopped
1 onion, finely chopped
Cheese slices; 1 would do, but if you can use 2 slices if you like the concept of double cheese...
Pizza base sauce (You can easily get it in the market, but if you want to make it on your own at home, here is the link . )

Method:

Take the chapati, and smear it with pizza sauce. Now add the onion and tomato as per your desired quantity. Tear the cheese slices into small pieces and put it around the whole chapati in a way that the cheese covers almost every sphere of the chapati.
Now if you have microwave, do heat it for minimum of 25 seconds and a maximum of 1 minute, or as long as the cheese takes to melt and the chapati takes to become crispier.

But if you do not have microwave, then put a little, just a little oil on the tava, put the chapati on it, and then cover the chapati with a plate large enough to cover it, so as to not let the steam escape. Cook it like that for 3-5 minutes.
Now switch the stove off, and carefully remove the plate as it will be pretty hot. Now take the roti pizza off the stove and enjoy. Personally, I didn't find much difference in taste of this home cooked pizza and that of thin crusted store's pizza.

Enjoy! 😇

Egg Paratha

I have lately been a little busy with my work, but now since I am back, I am about to share a really easy and tasty recipe you can make even if you are in a rush in the morning... Shall we start? Alright...

Ingredients:

Whole wheat flour (atta) dough
1 egg
Salt to taste
Few coriander leaves, 1 green chilli, and 1 onion, all finely chopped

Method:

Whisk the egg with a little salt. Add the chopped onion, green chilli and coriander leaves and mix well. In the meanwhile, do heat the tava.
Take a really big dough, and make roti bigger tahn you would usually do. Now apply a little oil all over the roti and fold it in half. Apply oil all over again and again fold in half.
Now roll it into a paratha like you would usually do. Place on tava and cook properly on one side, and then turn over and do the same onto the other side.
Once it is cooked, remove it in the plate and make a pocket in the centre of paratha, pour in the egg mixture there and carefully place it again on the tava. Apply oil all over and across the edges of the tava.
Keep cooking on the other side of the pocket till the egg gets a little firm, and then turn over and cook the egg side. Keep cooking it on low flame till the egg is properly cooked.

Remove in the plate and cut it in 4, 6, 8 or as many pieces as you would like and serve. Would taste best with ketchup.

Cheese Egg Toast

This is my favorite. favorite, favorite toast... I will do anything if I ever get to know that this one is going to be my bribe... 😋😉.. Try yourself to know why...

Ingredients:

4 bread slices
2 cheese slices
2 eggs
Salt and pepper to taste
Butter, as needed

Method:

Whip eggs in a bowl. Add salt and pepper powder to it, and then mix well. Pour the whipped egg over a medium plate as we will need it to coat our breads in egg for frying.
Now, place a cheese slice on a bread slice, Sprinkle pepper powder over it. Place another bread slice on top. Slice the sandwich in half, then. (You can even slice the sandwich in half later on, after you are done frying it in pan and about to serve. I just find slicing it beforehand, convenient. )
Melt butter in a pan. Then dip the sliced sandwich in the whipped egg and shallow fry on both sides or till it becomes golden brown in colour. Serve immediately.
